CONSCIENTIOUS means that they were careful not to step on or mishandle the herbs in the gardens, or to be mindful of the implements, paths, etc. In other words, they did their best to respect the space and everything in it.

I don't understand слишком here. Can someone be too careful? They were just EXTREMELY conscientious.

Да просто "очень", не "слишком". Контекст:
With the herb gardens it was probably a case of overwatering, and at least now they know not to overwater. The children were very conscientious with the herb gardens and some of them probably...you know, slipped them a little extra water when we weren't looking. Or maybe...well, I don't like to think about sabotage, although it did occur to us.

И "бережно" тоже лучше.

А вообще-то, мне кажется, по смыслу больше подходит усердно/добросовестно - слишком старались, и поэтому и лили слишком много воды.
Если "бережно", смысл вроде теряется.
Поэтому я сначала так и перевел.
