why can't we say "why are you writing to me?"
Texting implies they're using texting app for communication and that's fine. But in general it's still writing, right?

Nobody said you COULDN’T say it, but it doesn’t sound as good as TEXTING. Also, Evgenia specified “writing” on WhatsApp.
