During classes refers to all the classes and is kind of the long way of saying “during class” which means while any class is in session, generally. LESSONS is a little illogical because where a high-school class, for example, is usually one hour long, one a portion of that hour could be the actual lesson, and the rest could be study time, exams, quizzes, reading, etc. So if you apply that logic, you can see how ludicrous it is to say “use the toilet during lessons.” It should be GO TO the toilet during CLASS - because it’s while the class is in session, not while the teacher is giving a lesson.

No, that would be the clumsy way. It would be better to say “during class.” Using the plural “classes” is like saying “I run in the mornings” - it’s grammatical, but clumsy when you can generalize and say “in the morning.”
