Какой вариант больше подходит, если, например, урок закончился2 часа назад?

Using 'have done' ('past perfect') shows that they finished something before next actions. In terms of meaning, both sentences mean the same. As the meaning is clear, you don't need past perfect. So my option is 2 ('past').

 The first option doesn’t show that something is finished before the next action - it expresses that class isn’t finished yet and you have already done a lot. That use of the perfect expresses “already.“ The second option would be used after class has ended.

да. Если урок ещё не закончен , мы также скажем - мы многое уже сделали на этом уроке.
Но в подавляющем большинстве случаев в русском языке оценка даётся, когда урок закончен, когда есть что оценивать, есть результат. так считаю)

Вообще не принято оценивать результат преждевременно: Не говори "Гоп!", пока не перепрыгнешь.
