Excuse me говорят, когда с вопросом просят отвлечься и уделить внимание, или когда просят посторониться, короче, когда просят.
Sorry говорят, когда не могут удовлетворить просьбу. Или когда извиняются за что-то.

А Вы, Александр, и Татьяна посеяли во мне сомнение, и я решила проверить у знакомого британца. Я спросила, уместно ли употреблять здесь excuse me вместо sorry. И вот что он мне ответил: "Yes. Actually, it's better. You have no need to apologise for your phone ringing.:-)". В моем переводе орфографическая ошибка, просто ее сейчас исправлю.

I don’t agree at all. If you’re in a meeting, but you HAVE to take a call, you apologize for the interruption with SORRY and answer it. By the same token, if you’re in a conversation with someone and want to politely leave to attend to your call, you would literally ask them to excuse you by saying, well, EXCUSE ME. In other words, these are practically interchangeable depending on the speaker and the situation. For instance, a boss doesn’t need to apologize to an employee for taking a call during a conversation, but he may find it respectful and say sorry. Otherwise, he may just choose to call rank and end the conversation there and then with EXCUSE ME as a cue for the employee to leave.
